Willoughby is a small-format washed-rind cheese. Formerly made by Ploughgate Creamery, this cheese ceased to be manufactured after a fire there in September 2011. After developing the product throughout much of 2012, Jasper Hill Farm incorporated this cheese into their mix in 2013 as their newest offering. The cheese is named for Lake Willoughby in Vermont.
