Blue cheese is the term given to cheeses to which penicillium has been added, often giving it veins or spots of blue or green mold. The maturation process often occurs when the cheese is stored in a cave or similar damp, cool area.


This cheese usually has tangy, piquant, spicy and peppery flavor. Use in salad dressings with cream cheese for spreads.
